Roasted chicken

Chicken Rub:

Kosher salt                                                1/4 cup

Brown suger                                              1/8 cup

Garlic powder                                           2 Table spoon

Celery powder                                           2 Table spoon

Herbes de provence                                 1 tea spoon

Thyme                                                         1/2 tea spoon

Paprika                                                       1/2 tea spoon

Freshly ground Black pepper              1/2 tea spoon

Cumin powder                                         1/2 tea spoon

Mix the above items in a small bowl and store it in an air tight jar for future use.

How to prepare a Chicken:

1x Air Chill Chicken                                    3-4 lbs

(Air chill chicken has less contaminant because slaugther house uses cold air to cool off the bird instead of using cool water)

Sprankle rub all over chicken including the cavity.  Let it marinade for an hour.  If your oven has Rotisserie option, you can prepare the chicken this way.  Or you can simply stuck an empty beer / pop can inside the chicken cavity so the chicken can stand up on a roasting tray. Pre-heat your oven @ 450F and spray olive oil (use PAM if you don’t have a spray can)on the skin and cover the top part of the chicken with a small sheet of tin foil.  Let is roast for 20 minutes and turn down the oven to 375F.  Just remember roasting time is one pound for 20 minutes.  Remove the tin foil after half an hour to allow browning.  Take the chicken out when it is done to allow at least 30-45 minutes of self cooking (cooling) before carving.

Dinner is served………..


You can use the same rub in summer time to prepare your baby back ribs.
