Vietnamese pancake (banh xeo)

I was in Vietnam recently traveling from Ho Chi Ming City (Saigon) all the way up to Hanoi (Hoi An, Hue, Halong Bay).  Took two cooking classes, one in Ho Chi Minh City and one in Hoi An (Tra que organic farm)

Here is the recipe and a demo video how to make the most famous Vietnamese Pancake (Banh Xeo)!

Vietnamese pancake (banh xeo)
Rice flour                                                                      1 cup
Corn starch                                                                   1/2 cup
Ground turmeric                                                         1/4 teaspoon
Coconut milk 1/4 cup
Water                                                                             1 cup (add more if batter is too thick)
Green onion                                                                 1/2 cup (dark green part only)
Shrimp                                                                          1/4 cup
Pork or chicken                                                           1/4 cup (cut into small cube)
Bean sprout                                                                  1 cup

Serving salad:
Thai basil leaves                                                          small bunch
Mint leaves                                                                   small bunch
Cucumber                                                                     1/2 cup (julienne)
Carrot                                                                            1/2 cup (julienne)
Green leaf lettuce                                                       (wash well and pad dry)

Dipping sauce:
Vinegar                                                                         1/4 cup
Sugar                                                                             1/4 cup
Water                                                                            1/2 cup
Fish sauce                                                                    2 tablespoons
Carrot                                                                           1/4 cup (julienne)
Garlic                                                                            1/8 teaspoon (chopped)
Shallot                                                                          1/8 teaspoon (chopped)
Fresh lime juice                                                          1 tablespoon
Hot chillies                                                                  1 (cut to small pieces – optional)
Put liquid in a small boil and bring to boil till sugar dissolves. Let it cool off, add lime juice, garlic, shallot, chillies and carrot. Serve with pancake when done.

Optional serving suggestion:
Serve with rice paper – roll pancake with rice paper, wrap with salad and dip in sauce when eating.
