Malaysian Style Spicy BBQ Chicken Satay – 馬來西亞辣雞肉沙爹

Satay is a very popular street food in South East Asia such as Thailand, Malaysia and Singapore. Each country has its own variation of taste and level of spiciness. The Malaysian style satay has the added coconut flavor and the peanut taste. Instead of Chicken, you can use lamb, beef or pork when making this dish. It is an excellent appetizer before dinner or an addition to your backyard BBQ party.

Note:
Use chicken thighs instead of breast for best result
Customize the level of spiciness by adding more chilli pepper
Always serve with cucumber, tomato and lettuce for extra texture

Malaysian Style Spicy Satay Sauce -馬來西亞辣沙爹醬
Ingredients:
Sweet onion                                       1/2 (chopped) use Georgia Vidalia or Washinton Walla-Walla
Shallot                                                4x (finely chopped)
Garlic                                                  6x (finely chopped)
Hot pepper                                        4x (chopped – add more if you like it spicy)
Fresh lime juice from one lime
Peanut butter                                   6x tablespoons
Roasted peanut                                1 cup (crushed)
Coconut milk                                    400 ml (1 can)
Water                                                 400 ml
Fish sauce                                         4 tablespoons
Cayenne pepper                               1x tablespoon
Cumin powder                                 2x tablespoons
Turmeric powder                            2x tablespoons
Brown sugar                                    4x tablespoons
Oil                                                      2x tablespoons

Method:
Heat oil in a shallow pan, add sweet onion, garlic, shallot. Sweat mixture till translucent. Add peanut butter, cumin, turmeric and brown sugar. Mix well until it becomes a thick paste. Pour coconut milk and equal amount of water to the mixture. Use a whisker to stir mixture and make you are mixing it well. Add crushed peanut once you see satay sauce is boiling again. Mix in lime juice in the final step and your satay sauce is now ready.

Ingredients:
Chicken Thighs                                             x4 (debone)
Cilantro                                                          small bunch (chopped)
Fish sauce                                                      2x tablespoons
Satay sauce                                                   4x tablespoons (see recipe above)
Method:
Cut up chicken thighs into long strips. Marinade with cilantro, fish sauce and satay sauce for at least 30 minutes. Pierce through the chicken meat into the skewer (steel or bamboo). Heat up BBQ stove to high and cook each side for five minutes. Best serve with plain rice, green leaf lettuce, cucumber and tomato. Always serve with a small bowl of satay sauce on the side.
