Pot Sticker – Chinese Dumpling  鍋貼

Ingredients:

Pork butt                                                                           1 lb

Cabbage                                                                             2 cups

Kosher salt                                                                       1 teaspoon

Sugar                                                                                 1/2 teaspoon

White pepper                                                                  1/4 teaspoon

Soy sauce                                                                          1 teaspoon

Corn starch                                                                      1 teaspoon

Sesame oil                                                                       1 teaspoon

Water                                                                                4 tablespoons

Pot sticker wrapper 1 package (Double Happiness Brand) Oil 4 tablespoons

Method:

Cut up the pork to smaller pieces and use a meat pounder to smash the meat. Use a knife to chop the meat till it becomes minced. Add salt, sugar, pepper, soy sauce, water and corn starch to the minced meat. Use a wooden spoon to mix it in a circular motion till it becomes gluey.
Add sesame oil and mix well

Cut up the cabbage to small (1cmx1cm) pieces. Add three tablespoons of salt to cabbage for at least half an hour in order to drain the water out from the cabbage. Rinse the cabbage with water and use your hand to squeeze excess water out. Add the cabbage to the minced meat and mix well.

Separate the round shape pot sticker wrapper one by once. Put half a teaspoon of meat to the center of the wrapper and fold it to half shape. Apply a small amount of water to the edge of the wrapper and carefully fold it five to six time.

Use medium heat to heat up a flat bottom cast iron pan, add four tablespoons of oil. Place pot stickers in the pan in a line. Add 1/2 cup of water to the pan and cover it with a lid. Let if cook for 5-8 minutes and remove the lid. The water will evaporate from the pan. Once you see the water is all gone, use a spatula to remove the pot stickers to a serving plate.

Pot Sticker Dipping Sauce
Ingredients:

Green onion                                                                  2x cut to small pieces

Ginger                                                                            2 thin slices, julienne

Cilantro stem                                                              1 teaspoon (chopped)
Hot bean sauce                                                           1 teaspoon (more if you like it spicy)

Spiced vinegar                                                            1 tablespoon
Fish sauce                                                                    1 teaspoon

Soy sauce                                                                     1 tablespoon

Sugar                                                                            1/2 teaspoon

Sesame oil                                                                  1 tablespoon

Oil                                                                                 2 tablespoons

Water                                                                           3 tablespoons

Method:

Place green onion, cilantro and ginger in a small bowl. Heat oil in a small pan till very hot. Pour oil immediately over the green onion. The hot oil will force the aroma out from the green onion, cilantro and ginger. Add the rest of the ingredients to the bowl , mix well. Finish it with sesame oil. Serve with pot sticker.

Note: omit hot bean sauce if you don’t like it spicy
