Pan Cake, Blueberry with thick cut double smoked bacon – Sunday best

It is extremely easy and simple to prepare your own pancake mix powder. No fancy ingredients are needed and you should have all of the basic items in your kitchen. You can use whole wheat flour instead of all purpose flour for this recipe.

For the pancake mix (makes 7 cups):

  • 6 cups (940 g) all-purpose flour
  • 1/3 cup (77 g) granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt

After mixing the pancake mix, it can be stored in an air tight container for six to eight months.

Cooking method:

Add 1 1/2 cup of pancake mix to a bowl. In a separate small bowl, whisk one large egg with 1 cup of milk. Pour the milk/egg to the pancake mix and mix well till you can see a smooth batter appearance. it should be able to make 4-5 pancakes.

Heat up a non-stick pan or a cast iron pan, low/medium heat. Use a kitchen paper towel to grease the pan. Use a medium size ladle to pour pancake batter to the heated pan and add blueberry evenly onto the batter. Flip over the pancake once you see bubbles forming on the surface (about two minutes) and cook the other side for another two minutes.

Serve with Maple syrup, thick cut bacon and Irish butter.
